When you are choosing flat sheets, you're looking at two measurements - width and length, while you are looking at width, length, and depth for fitted sheets. Flat sheets are designed to be longer and wider than fitted sheets to provide flexibility in how they drape over the mattress or so that you can tuck the edges under the mattress. This extra length and width also make flat sheets a bit more versatile, as they can be used on beds of slightly different dimensions. 

In contrast, fitted sheets are tailored to snugly fit the mattress with elasticated corners, and the depth of flat sheets varies from the standard 40 cm to an extra deep 55 cm for deep mattresses.
